So tonight I just decided that I really wanted some fried rice and I’ve always thought that I could make fast food so much better than the restaurants in terms of taste and health. This is a perfect example of that…anyone else feel like there’s not enough broccoli??
I didn’t measure because I hate measuring but that’s okay because it gives you some creativity. You can take any of these ingredients out and sub it for something else if you don’t have a particular one on hand. However, I wouldn’t sub the japanese products just because that helps it actually taste like fried rice rather than some random stir fry of veggies.
Ingredients
- Brown rice
- Broccoli
- Carrots, shredded
- Edemame (leave out if you’re soy-free)
- Swiss chard (or any leafy green)
- Green onions
- Coconut oil
- Mirin
- Coconut aminos (or liquid aminos, soy sauce, tamari)
- Rice wine vinegar
- Hemp seeds for garnish
- Nutritional yeast for garnish
Put about a tablespoon of coconut oil in the pan and once it’s melted add the brown rice. Let it sautee for a little bit then start adding your veggies. I put in my broccoli first since it takes longer to cook than the other veggies. Then add your carrots, swiss chard, mirin, coconut aminos, rice wine vinegar. Add your green onions towards the end so they don’t get cooked to death. Once you’ve plated you can add hemp seeds which are a great source of protein and some nutritonal yeast if you want cause…I put that shit on everything. Delish!
