So tonight I just decided that I really wanted some fried rice and I’ve always thought that I could make fast food so much better than the restaurants in terms of taste and health.  This is a perfect example of that…anyone else feel like there’s not enough broccoli??

I didn’t measure because I hate measuring but that’s okay because it gives you some creativity.  You can take any of these ingredients out and sub it for something else if you don’t have a particular one on hand.  However, I wouldn’t sub the japanese products just because that helps it actually taste like fried rice rather than some random stir fry of veggies.

Ingredients

  • Brown rice
  • Broccoli
  • Carrots, shredded
  • Edemame (leave out if you’re soy-free)
  • Swiss chard (or any leafy green)
  • Green onions
  • Coconut oil
  • Mirin
  • Coconut aminos (or liquid aminos, soy sauce, tamari)
  • Rice wine vinegar
  • Hemp seeds for garnish
  • Nutritional yeast for garnish

Put about a tablespoon of coconut oil in the pan and once it’s melted add the brown rice.  Let it sautee for a little bit then start adding your veggies.  I put in my broccoli first since it takes longer to cook than the other veggies.  Then add your carrots, swiss chard, mirin, coconut aminos, rice wine vinegar.  Add your green onions towards the end so they don’t get cooked to death.  Once you’ve plated you can add hemp seeds which are a great source of protein and some nutritonal yeast if you want cause…I put that shit on everything.  Delish!

totally stoked to see this too! I don’t think I’ll ever lose motivation to get my nutrition degree and become a RD because I actually do CRAVE broccoli and kale and spinach and brussel sprouts and strawberries, bananas, pears, apples and I could keep going!  I want to help other people change their thinking into craving fruits and veggies and when they see a big mac have a look of disgust.

raw food challenge: day 1

started my raw food challenge today :] I was really afraid I would have a horrible headache this morning from not having coffee but it actually didn’t develop till this afternoon.  I tried to sleep it off but it’s still there…so that makes me think it’s partly from the toxins leaving my body.  I don’t know a whole lot yet about being raw so everything I eat won’t be 100% raw but the majority of my food intake will be as close as possible to it.  here’s what my day has looked like so far

breakfast (4:30am) - 1 banana & 1 apple then I got off work at 8 and was kind of hungry so I ate my pear I packed and a few walnuts & almonds

lunch (10:30) - my whole foods lunch post from earlier…the tofu was not raw and I had a grain dish in there too that wasn’t as well

snacky snack - I don’t have a juicer so I tried to find something in WF and I found a raw cranberry ginger juice.  the ginger gives it a really strong flavor and smell that I can’t decide if I completely like yet…but I’m still workin on it

dinner - TBD…probably a nice big salad, might make a piece of toast & peanut butter to go with it

so all in all it’s about 75% raw…but who’s counting. it doesn’t matter.

I started my run with a little too much enthusiasm and ended up exhausting myself for the majority of the run :[ I know I shouldn’t do this but I was just itchin to run…and trying to beat an old lady in front of me haha…which I did.
